- 2 cups all-purpose flour (maida)- 1 and 1/2 tablespoons fine grained semolina or rice flour- 1/4 teaspoon baking powder- 2 tablespoons curd (plain yogurt)- 11/4 cups warm water- 1/2 teaspoon saffron threads, slowly dry-roasted and powdered- 3 cups sugar- 2 and 2/3rd cups water- 1/2 teaspoon green cardamom seeds powder- 1 and 1/2 tablespoon rose water- Ghee or vegetable oil for frying

Method

1. In a bowl (preferably a ceramic bowl), mix the all-purpose flour, semolina or rice flour, baking powder, curd and 3/4th cup of the water.2. Mix well with a whisk until you get a smooth consistency.3. Set aside for about 2 hours to ferment.4. Whisk thoroughly before use.5. Prepare one string syrup by dissolving sugar in the water and adding saffron and cardamom powder when it’s almost ready.6. Heat oil in a pan over medium heat .7. Pour the batter into the pan in a steady stream (or coconut shell with a hole) to form coils and make few at a time .8. Deep fry them until they are golden and crisp all over but not brown.9. Remove from the pan and drain on kitchen paper and immerse in the syrup.10. Leave for at least 4-5 minutes so that they soak the syrup.11. Serve warm or cold with your favourite topping like ice cream, cream or nuts!
